As part of our Meet the Chef series, we're talking to some of Cumbria's finest about their lives in and out of the kitchen. This week, it's the turn of Dominik Rokita, head chef at the Brewery Arts Centre in Kendal

What does your role involve?
As head chef, my role is varied and busy – no two days are the same.

How long have you been a chef?
I have been a chef for over 20 years, and working in kitchens even longer than that.

How did you first get into cooking?
Both my parents are passionate about food and cooking – from a young age, I was encouraged to cook and bake at home. I’ve also learnt a lot from chefs who have mentored me down the years – Steven Doherty is one who immediately springs to mind.

Where did you learn your craft?
My first job in the UK was in the Lake District - the Craig Manor Hotel. The hotel has an extremely busy restuant and is popular with weddings, so it was great place to learn on my feet. 

What was your first job in hospitality?
Back in Poland, I worked in many different restaurants and gastropubs – I first started working in kitchens when I was only a teenager.

What is your signature dish? 
My signature dish is a Polish dish I perfected making with my grandmother when I was only a small child – Pierogi. These are traditional, rustic, homemade Polish dumplings with cheese and potatoes. 

What’s been your worst cooking disaster?
My worst culinary disaster was when I attempted to make a chocolate lava cake for the owners of the restaurant I was working at – sadly, the centre of the cake did not have a runny centre as it should have. I was devastated!

What are your culinary ambitions?
My lifelong ambition is to expand my skills in the art of cooking using, my creativity and innovation. I never want to stop learning new techniques and experimenting with flavours. 

What do you like to eat?
Like most men, I am an ardent carnivore, so I love my beef and steak! My favourite thing to cook for my family at home is Asian-inspired cuisine, like Chinese.

How do you achieve a work/life balance?
I can honestly say that my work/life balance at Brewery Arts is perfect – I have three days off a week to spend time with my family.
