A man from Ulverston is sparking a 'new era' at a restaurant next month.

This comes after the the Black Swan in Ravenstonedale, near Kirkby Stephen, announced on Thursday that Andy Beaton would be taking over the role of head chef there.

The current person in the role is Scott Fairweather, who has been at the Black Swan for eight years.

The restaurant confirmed that Scott's final service will come on Monday, September 2 before he moves onto pastures new.

A spokesperson from the Black Swan added: "Scott’s achievements here are a fantastic example of dedication to his craft and we cannot wait to see what he chooses to do with the next chapter of his culinary journey.

"We thank him for his commitment and extremely hard work and dedication over many years, and wish him and his family lots of love for their future."

His replacement is a Cumbrian native who has been making a name for himself across the Lake District culinary scene for a number of years.

Andy initially started his career at Raymond Blanc’s Le Petit Blanc, before joining the team at Linthwaite House.

He has been involved in other well-known kitchens such as Miller Howe -where he cooked for Her Majesty The Queen - the Lakes Distillery, and Storrs Hall, where he has served as Head Chef for over five years.

The Black Swan noted that the changes have given them an 'opportunity to reflect on what we do and what people want', with exciting plans now in store.

"Whilst both chefs take inspiration from Cumbria's fantastic produce, there is no doubt that you will see changes to our menus over the coming months," they added. 

"As we embark on this exciting transition, we would like to invite customers both old and new to experience the new era at The Black Swan.

"We will retain our 2 AA rosette menu, alongside more relaxed and informal bistro dishes and traditional pub classics."

The restaurant will be opening seven days a week from the week commencing September 9, serving breakfast, lunch and dinner.
