Multi-michelin starred chef Simon Rogan has teamed up with photographer Cristian Barnett to celebrate the twenty year anniversary since the opening of L'Enclume.
L'Enclume won its third Michelin star earlier this year and last week was named no.1 in The Good Food Guide’s most exciting restaurants of 2022.
The cllaborative photo series, named One Dish, begins with forwords from Simon and Cristian. The book follows a single dish through the various stages of its construction in a series of creative photographs.
In the making of the project, Simon and team braced the elements and swapped the walls of the restaurants for the astounding scenery of the Cartmel Valley, accessible just meters from the doors of L’Enclume.
Each image represents a different step in the creation of the L’Enclume dish: roast gem lettuce, hen of woods, fermented mushroom juice, elderflower.
The series not only pays homage to the meticulous cooking at L’Enclume and Simon’s other Lake District restaurants, but also to the team who, from chefs to kitchen porters, receptionists and housekeeping, make the restaurant operation what it is today.
Throughout One Dish, which contains 17 unique images involving 42 members of staff including Simon himself, the team carry out day-to-day, typical tasks such as setting tables, making beds and washing the pots, all of which is framed by the scenic backdrop of The Lakes.
The entire collection of One Dish images will be displayed in a one-off exhibition in London in 2023.
One Dish is available to pre-order from the Simon Rogan website, for shipment on November 1.
